Butter Chicken - murgh makhani - is built on two things done properly: the chicken and the gravy. The chicken is marinated in yogurt, ginger, garlic and spice, then cooked in the tandoor so it picks up a smoky char before it ever meets the sauce. Skip that step and you get boiled chicken in tomato soup.

The gravy is a slow-cooked tomato base finished with cream and butter, balanced with garam masala, fenugreek and a touch of sweetness. The mark of a good one is that you can still taste the individual spices rather than a wall of sugar and cream. It should coat the back of a spoon, not pool like a thin soup.

At Ginger, the sauce is made fresh using locally sourced ingredients, which is why the colour shifts slightly with the tomatoes through the year. That is a feature of cooking from scratch, not a fault.

We are open 11:00 AM to 9:00 PM Monday through Thursday, and 11:00 AM to 10:00 PM Friday, Saturday and Sunday. Lunch Specials run from 11 AM to 3 PM and Dinner Specials from 3 PM to 9 PM, which is the cheapest way to try Butter Chicken alongside rice and naan.
