An Indian menu can run to a hundred items, which is genuinely intimidating the first time. The good news is that it is organised on a logic that is easy to learn - and once you have it, ordering gets simple.
How to Read an Indian Menu
Start with the structure. Starters are grilled in the tandoor or fried - Chicken Tikka, Fish Pakora, Paneer Tikka, Lamb Sheesh Kabob. Mains split into Meat Dishes and Vegetarian Dishes, and within each, the dish name tells you the sauce, not the protein.
That is the key insight: Korma, Vindaloo, Rogan Josh, Kadai, Palak, Coconut Curry and Butter are all sauces you choose a protein for. Once you know you like a Korma, you can order it with chicken, lamb or prawn and know roughly what is coming.
Then add a bread or a rice, and one side. A table of four typically orders two mains, one rice, one bread basket and a raita. That is enough food without over-ordering.
Spice Levels and What They Actually Mean
Heat and flavour are not the same thing. A Korma is rich and mild; a Vindaloo is genuinely hot. Rogan Josh sits in the middle - deeply spiced with cinnamon and clove, but not built around chilli. Butter Chicken and Shahi Paneer are the mildest things on the menu and the safest bet for children.
We cook to the heat level you ask for, so tell us. Mild does not mean bland - it means the chilli comes down while the rest of the spice stays. If you are unsure, order mild and add heat with a side of chutney or the green chillies from the Onion And Green Chilli side.
Raita and Mango Lassi both cool the palate. Water does not - capsaicin is not water soluble, which is why dairy works and a glass of ice water does not.
